Healthy Beef Ramen Noodles

Ingredients
  • 6 oz ramen noodles (2 packets with seasoning packets discarded)
  • 1 tablespoon vegetable oil
  • 1 red bell pepper chopped
  • 1 large onion chopped
  • 1 lb. ground beef
  • ½ head broccoli cut into florets
  • Salt and pepper to taste 
Sauce
  • ¼ cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 clove garlic minced
  • 2 teapoons sriracha
  • 1 scallion (chopped)
Instructions
  1. In a large skillet over medium heat, heat oil. Add onions, broccoli and peppers then cook until tender, 5 minutes. 
  2. Remove from the pan. Add ground beef, season with pepper and salt then cook until no longer pink, 5 minutes more. Drain fat and return vegetables back to the skillet 
  3. Make sauce: Whisk together soy sauce, apple cider vinegar, brown sugar, Sriracha, and garlic. 
  4. In a medium saucepan, bring water to a boil. Add cooked ramen noodles and cook until tender, 2 minutes. Drain. 
  5. Add cooked ramen noodles to skillet and pour over sauce. Toss until completely combined. Taste and season with more pepper and salt, if necessary. Then garnish with green onions and serve.

Easy Thai Noodles With Peanut Sauce
Ingredients
  • ¼ cup vegetable oil 
  • 1 lb. linguine (or spaghetti, ramen, fettuccini) 
  • 3 cloves garlic (chopped)
  • 1 carrot (julienned)
  • 1 bell pepper (red, julienned)
  • ⅓ cup soy sauce 
  • ¼ cup peanut butter
  • 1 tbsp honey
  • ⅓ cup peanuts (chopped)
  • ¼ cup green onions (sliced)
  • 1 teaspoon Chili sauce
  • 1 tsp sesame seeds
Instructions
  1. Boil pasta or noodles according to box directions. Then drain. 
  2. While the pasta is cooking, prepare the sauce. In a medium sized bowl, whisk together soy sauce,peanut butter, honey and chili sauce until fully combined. Set aside. 
  3. Preheat oil in a large skillet. Add carrots, bell pepper and garlic and sauté for 2-3 minutes. Add drained pasta and sauce into the skillet and mix until fully combined. Top with chopped cilantro, peanuts, sesame seeds and green onions.

Marinara Sauce Recipe

Marinara Sauce Recipe
Ingredients
  • 3 cans of Crushed Tomatoes either regular or with oregano, basil and garlic 28 oz. sized cans OR 12 to 15 fresh tomatoes (peeled, chopped and blended in a food processor)
  • 4 cloves of garlic
  • 1½ tsp of black pepper
  • 4 tbsp of dried basil
  • ⅓ cup of grated Parmesan or Romano Cheese
  • 2 tbsp olive oil
  • optional 1 to 2 tbsp of sugar (this takes out the bitterness and makes it a little sweet)
  • optional green peppers, minced
Instructions
  1. Heat the olive oil in a 5+ quart pot over medium heat and add the chopped garlic. 
  2. Heat for one to two minutes, making sure not to burn the garlic, then add all the tomatoes, basil, black pepper and sugar. Stirring often, bring to a low boil. 
  3. Reduce heat to low and simmer for 2 to 3 hours stirring often.
  4. For the first half of the simmer time, do so with the pot uncovered, then cover. 
  5. Add the cheese, stir in and simmer for an additional 5 minutes or so.
